Flambeed Peaches and Blueberries


1 pint fresh blueberries, rinsed
3 ripe peaches, peeled and sliced
1/2 cup sugar
2 tablespoons unsalted butter
1 cup orange juice
1/4 cup lime juice
1/2 cup rum
Lime zest


Divide the sugar between the peaches and blueberries and set aside. Heat the rum in a small pan or metal ladle until it starts to steam. Keep warm. Melt the butter in a saute pan until it foams. Add the peaches and saute for 2 minutes. Add the blueberries and saute another 2 minutes. Add the orange juice and lime juice. [NOT IN ORIGINAL INGREDIENTS LIST] Cook on high heat for 1 minute. Use a match or flame to ignite the warm rum and pour slowly and carefully over the peach and blueberry mixture. Cook on high heat for 1 more minute. Remove from heat and serve over the individual rum babas. Garnish with lime zest.
